Will the signed .ipa get installed on the jailbroken ipad expire?

My wild guess is that it will expire.
Based on my understanding of the jailbreak procedure, one of the things that jailbreak does is turn off signature verification (no matter if Apple Management Profiles are signed or whatever). I don't think they go and bypass other protections (why would they want to if they can create a provisioning profile that will expire after 100 years).
However, all this is speculation. It also depends on the jailbreak itself (different jailbreak apps for different iOS versions may disable different protection mechanisms).
