How to redirect package log file output

While the installer (built via packagemaker) works ... from the menu we can select Window > Installer Log

and then select Save

it ... but that's not something that can be asked of all those who run the installer.

The installation itself should be a simple process. But in case something goes wrong and we need to go back and sort out the logs, it would be great to tweak the packer or installer that it produces ... spitting out the log file every time it starts.

How can I do that?

/var/log/install.log

is written by the installer and contains information about installed packages, executable scripts before installation / post-installation, and any errors that occur along the way.
