Why should I structure my HTML emails with tables and not divs?

I've read on many sites that the HTML email layout should be structured with tables, not using divs. What is the reason for this?

Since Outlook 2007 (on Windows), HTML emails are rendered using Word. Word doesn't have very good HTML and CSS support, so why are you stuck with tables for layout.
