What is the current level of XHTML support in browsers and search engine spiders?
Ignoring the IE case, are there any other browsers that cannot understand the application / xhtml + xml content type? What about search engine spiders?
I could not find answers on the internet that were not several years old and possibly inaccurate.

If you ignore 80% of the market (yes, IE) then XHTML is very well supported and search engines have no problem with it (XHTML is much easier to process after all).
In general, XHTML support is not an issue. IE doesn't support it, but as long as it serves as a type of content that it really understands, it will still get it okay and everyone else supports it properly.

As new browsers are being reinvented at a steady pace, there is no definite meaning for "any" in "any other browsers."
You need to (1) select some browsers that you think you would like to support, (2) check those specific browsers.
Look at a page like BrowserShots for a list of browsers that might interest you.
