The OS X built-in installer can be scripted either through a shell script (or any other executable) at specific points in the installation, or it can be configured much more broadly using JavaScript. Read the OS X Software Delivery Guide .

Best answer: do not.
The "Mac Way" only needs to provide an .app that the user can drag and drop into / Applications or ~ / Applications..app is really a directory containing all the software assets: code, properties, images, etc.
The only time you need to create an installer package is when you change the system. In the Mac world, this is rarely the right answer.
