How are Mac OS X processes and threads different?

In my Mac OS X Activity Monitor, it lists each process ID for each application. It links multiple processes to a single stream, for example iTunes and Finder are currently listed under the "stream" section. As I learned about threads and processes, I might think it should be the other way around. I found out that a process has one or more threads. Can someone try to clear this up for me. Will these processes they speak of be considered easy processes?

I am not an OS X user, but from the screenshots found by our dear friend Mr. Google, it seems to indicate the number of threads created by this process. This way, both iTunes and Finder start 7 streams each.
