Well, it really depends on how much work you want to do. You can do as little as changing the logo - which is pretty straightforward - before completely rebuilding the interface to match your company's brand. The path of least resistance is to copy the existing skin and modify it according to your needs.
Anyway, start the admin interface and go to the server configuration page. You may be interested in two options: customizing the logo and managing the interface. The logo change is pretty obvious, so I'll stick with the interface management part.
In the "Interface Management" section, go to the "Skins" tab. The first thing you should do here is find the skin that most closely resembles what you want your finished product to look like. You will see in the list of skins that there is a floppy disk icon; clicking on this icon will allow you to download a .zip or .tar.gz file containing all the files for that skin.
Now you just need to reshape the skin as needed. I recommend setting up a development server (or virtualized server) where you can play with Plesk without damaging your production server. And, of course, best practice dictates that you should probably put everything under source control to make sure nothing comes out.
Anyway, once you've made your changes and you're satisfied with the results, go back to the "Skins" page in the "Interface Management" section and click the "Add New Skin" button. Slide in your skin (to match how it was zipped when loading the base skin) and upload the file. After you download it, you can select a skin from the skins page. To be on the safe side, I recommend creating a dummy client and testing the skin in production before switching all existing users to the new skin in case there is a skin problem.
And once you're satisfied that your newly modified skin works in the workplace, go ahead and switch all existing users.
