How do I set up a read-only connection to SQL Server 2012 without having to create a read-only user?

Connection String Property ApplicationIntent

From the docs:

Declares the load type of the application when connecting to the server. Possible values: ReadOnly and ReadWrite. For example:

ApplicationIntent=ReadOnly
